What is required for a Home Roaster 

There are two conditions that must be met by a home roaster: 1) it must be able to roast deliciously, and 2) it must be easy to use. The two conditions must be met by a home roaster.

Many experts recommend charcoal roasting (i.e., far-infrared roasting) as the best way to roast delicious beans.

When far-infrared rays are used, the beans are baked from the inside and plump up, resulting in few cracks on the surface. The components of coffee beans are infused with the energy of far-infrared rays; consequently, the vibrational energy generates heat, so the inside of the beans can be baked uniformly. The far-infrared allows roasting at a relatively low temperature, so there are fewer cracks due to heat from the outside resulting a rich coffee with rich ingredients.

Far-infrared radiation produces enough vibrations that bake the interior of the bean, which also results in making it plump. The heat from vibrations make it possible to bake the interior of the bean niformly.The low temperature that is possible by the far-infrared radiation system results in fewer cracks produced by heat from outside, as a result, coffee with rich ingredients is produced.

The feature of far-infrared rays is that the object to be heated itself generates heat without an external heat source.  This feature of far-infrared rays results in the surface and inside being heated simultaneously regardless of the object's size. Therefore, it can be heated uniformly in a short time without impairing the quality, and the controllability and operability are good.

Food can be heated without directly touching the heat source with the use of far-infrared rays. So overheating food surfaces can be avoided. In other words, it is possible to reduce the burning of beans. It has been shown that non-burnt beans have less acid that causes stomach upset.

In addition, far-infrared rays can provide the energy required to raise the temperature of the interior of food within a relatively short time, so it is excellent in uniform heating properties, and control of the energy input to food is more straightforward than other heating methods.

Roasting with far-infrared rays does not destroy the fibers of coffee beans, resulting in hints of the original taste of the beans. It retains the aroma for a more extended period, suppresses miscellaneous taste, bitterness and astringency, and produces coffee with an enjoyable aroma, sweetness, and richness. In addition, the unpleasant odor caused by regular roasting can be eliminated by using the far-infrared method. Therefore, it is said that far infrared gives you a more robust, fresh coffee aroma than other methods by over 25% on average.

As the studies mentioned above reflect, far-infrared rays are an effective method for roasting coffee beans.
